UDMA-enabled Compact Flash to IDE adapters are not difficult (or expensive) to come by; just check the specs when buying.
The Windows XP / program partition on my main PC only uses 7GB, so it is tempting to replace my boot drive with one of the 8GB cards slotted into a CF-IDE adapter.
